Pecan Pie Muffins

"I think I'll start a blg and try a few new recipes three times a week..."Seriously? What was I thinking? I just recovered from a c-section, hubby had surgery...then a nice trip to the ER one week later, and an emergency trip to the doctor's office this past week...did I mention we have 4 kids + a newborn?...clearly I'm in over my head, it's been a crazy few weeks and yesterday was the first time I actually had time to bake. So I was super excited when I stumbled across this recipe on another blog - it combines two of my favorite things - muffins and pie!
Pecan Pie Muffins:
Love Love LOVE this recipe, super easy, super fast, only 5 ingredients, and melt in your mouth delsih!
1. Throw ingredients into bowl, stir together.

2. Spray 24 mini muffin pans w/ baker's joy (or equivalent), distribute batter evenly into muffin cups (I love using scoops to ensure consistent batter amounts).

3. Bake then devour!

  2. Thanks Ingrid, they're really delicious and do have that pecan pie flavor...hubby won't quit nagging me to make them again but I just haven't had time :)
